Recipe Ingredients for Katie's Spicy Black Bean Salad

3 cup Beans, Black, Mature Seeds
3 oz Onions
12 oz Tomatoes, Red, Ripe
12 oz Squash, Summer, Zucchini, Includes Skin
2 pepper Peppers, Jalapeno
6 oz Celery
1 lime yields Lime Juice
1 tbsp Olive Oil
1 tsp Cayenne
1 tsp Chili Powder
1 tsp Garlic Powder
1 tsp Cumin
1 tsp Salt Substitute
0.25 tsp Sea Salt
1 tsp Pepper, Black

Recipe Directions for Katie's Spicy Black Bean Salad

  1. Prepare black beans (from dried) according to instructions.

  2. Finely chop all veggies - be sure to deseed the jalapeno peppers if you don't like a lot of heat.

  3. Mix oil, lime juice and spices together.

  4. Toss veggies and beans into dressing until it's well coated.

  5. Chill for at least one hour to allow flavors to set.

  6. Enjoy alone, on top of a green salad or as a side to a protein.
