Makes about 5 1 c. servings. Sub vegetable stock if you're vegetarian.

Recipe Ingredients for Katie's Savory Buttercup Squash Soup

16 oz Buttercup Squash
8 oz Apples
4 oz Onions
4 oz Celery
4 cloves Garlic
3 serving Cooking Stock
1 tablespoon Sage
2 tbsp Rosemary, Fresh
1 tsp Pepper, Black
0.5 tsp Sea Salt

Recipe Directions for Katie's Savory Buttercup Squash Soup

  1. Cut medium squash in half, remove seeds and guts, and roast at 375 in a shallow pan with a few Tbsp. of water for 30-40 minutes or until tender.

  2. Allow squash to cool enough to handle and remove skin.

  3. Dice onion, celery and garlic.

  4. Dice apple and squash (larger chunks).

  5. Cook all ingredients covered over medium heat for 40-35 minutes or until everything is tender.

  6. Blend (in batches if needed) to a smooth, thick consistency.

  7. Enjoy!
