Recipe Ingredients for Katie's Quinoa Veggie Casserole

0.5 cup Quinoa
340 1/5 grams Squash, Summer, Zucchini, Includes Skin
12 oz Baby Bella Mushrooms Packaged
8 oz Spinach
2 cup Tomato Sauce
2 tsp, ground Basil, Dried
1 tbsp Olive Oil

Recipe Directions for Katie's Quinoa Veggie Casserole

  1. Preaheat oven to 350.

  2. Prepare quinoa according to instructions.

  3. Saute zucchini and mushrooms in olive oil on medium heat. Add spinach in final minute just enough to wilt, stirring often.

  4. Combine quinoa, vegetables, sauce and basil.

  5. Bake in a casserole dish at 350* for 15-20 minutes until bubbly.

  6. Optional: top with shredded cheese like mozzarella if desired.
