8 oz Cucumber, Peeled
8 oz Tomatoes, Red, Ripe
2 oz Feta Cheese
12 olives Kalamata Whole Olives

Recipe Directions for Katie's Mediterranean Quinoa Salad v2

  1. Prepare quinoa according to instructions, then place in fridge or freezer to chill.

  2. Wash & chop vegetables.

  3. Slice olives into fourths.

  4. Mix all ingredients.

  5. Serve cold - drizzle with evoo or lemon juice if desired.
