Recipe Ingredients for Katie's Eggplant & Quinoa Casserole

0.5 cup Quinoa
32 oz Eggplant
2 cup Tomato Sauce No Salt Added
1 tbsp Olive Oil
0.5 cup leaves, whole Basil, Fresh
1 lemon yields Lemon Juice
1 cup, shredded Mozzarella, Part Skim Milk, Low Moisture Cheese

Recipe Directions for Katie's Eggplant & Quinoa Casserole

  1. Prepare quinoa according to package instructions (2 pts water, 1 pt quinoa for 20-25 minutes).

  2. While that's cooking, preheat the oven to 375.

  3. Wash and dice the eggplant.

  4. Toss eggplant in olive oil and lemon juice mixture.

  5. Bake eggplant for about 20 minutes until cooked through.

  6. Combine eggplant, quinoa, tomato sauce in 9x9 pyrex, top with cheese and bake for about 15 minutes until cheese is melted and bubbly.

  7. Enjoy as a main course with salad or serve a smaller portion as a side dish to something else.
