Recipe Ingredients for Katie's Eggplant Chickpea Dip

16 oz Eggplant
3 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 tbsp Olive Oil
2 tbsp Peanut Butter
1 serving Soy Sauce
2 tsp Chili Sauce
1 oz Cilantro
1 oz Lemon Juice
1 tsp Ginger, Ground

Recipe Directions for Katie's Eggplant Chickpea Dip

  1. Toss eggplant in olive oil and roast (or grill).

  2. Add all ingredients to food processor and blend until smooth.

  3. Enjoy with crudite or crackers.
