Homemade Chicken Parmesan - great even with jarred sauce!

Recipe Ingredients for Katie's Chicken Parmesan

16.3 oz Tuscan Traditions Roasted Garlic Maranara Sauce
4 Serving Chicken
1.5 tbsp Olive Oil
0.33 large Egg, Whole
1/4 cup Bread Crumbs Plain
1.5 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for Katie's Chicken Parmesan

  1. Preheat the oven to 350 degrees, and heat a cast iron skillet with 2 tablespoons of olive oil

  2. If they aren't already, split the chicken breasts so they are flat tenders. Coat the fillets in egg, then roll in bread crumbs. Fry until lightly golden.

  3. Rub a little olive oil into the bottom of an oven-safe baking dish, pour a little sauce into the bottom and set fillets on top. Add a little more sauce around and on top. Sprinkle a little of the mozzarella on each fillet.

  4. Bake for about 30 minutes. Watch carefully - set a piece of tin foil on top if the cheese starts to get too brown.

  5. Serve with a salad or veggies and enjoy!

  6. Tip - this is also great method to cook rock cod. Fry it gently, then place in the pan with the sauce and cheese. Since it is almost done cooking when it is fried, all it really needs is to heat up the sauce and brown the cheese. Delicious!
