Yields 12 healthy muffins - turned out a little dry, next time will cut oil and add 1 c. applesauce.

Recipe Ingredients for Katie's Carrot Apple Oat Muffins

1 cup dry Quick Quaker Oats
1 cup Organic Whole Wheat Flour
10 oz Apples
6 oz Carrots
0.5 cup (not packed) Raisins, Seedless
4 packet Stevia Sweetener
3 large Egg, Whole
0.25 cup Olive Oil
0.5 tsp Baking Powder
0.5 tsp Baking Soda

Recipe Directions for Katie's Carrot Apple Oat Muffins

  1. Pulse carrots and apples in food processor until very finely chopped.

  2. Mix dry ingredients.

  3. Mix wet ingredients.

  4. Combine all ingredients.

  5. Scoop 1/4 c. portions into cupcake pan (lined with paper liners or sprayed with cooking spray).

  6. Bake at 400 for about 20 minutes or until cooked through.
