Recipe Ingredients for Kathy's stir fry chicken

472 g chicken breast
2 1/4 oz red wine
1 1/4 oz. soy sauce
1/2 tsp. pepper
1 tbsp. canola oil
1/4 c. flour
34 g. scallions
1 tbsp. minced garlic
210 g. summer squash
106 g. zucchini
64 g. celery
36 g. carrots
29 g. broccoli
35 g. red bell peppers
19 g. yellow bell peppers
8 g. green bell peppers
13 1/2 oz. coconut milk
1 tsp. curry powder

Recipe Directions for Kathy's stir fry chicken

  1. Marinate chicken in wine, soy sauce, and pepper.

  2. Heat oil in wok. Brown scallions and garlic.

  3. Coat chicken with flour. Stir fry and remove from wok.

  4. Stir fry vegetables.

  5. Return chicken to wok. Add coconut milk and curry (you can use powder or paste).

  6. If sauce is too thick, thin with chicken broth.
