Delicious rhubarb dessert with meringue

Recipe Ingredients for Kathy B's Rhubarb Dessert with Meringue

2 c flour
2 sticks margarine, melted
2 tbsp sugar
1 tsp salt
2 c sugar
4 tbsp flour
1 c. cream (or half & half)
5 c rhubarb
6 egg yolks
6 egg whites
1/4 c sugar

Recipe Directions for Kathy B's Rhubarb Dessert with Meringue

  1. Preheat oven to 350 degrees.

  2. Mix together flour, butter, sugar(Tbsp) and salt and press in bottom of 9x13 cake pan. Bake 10 min. or until slightly browned.

  3. Mix together remaining ingredients (except egg whites and 1/4 C sugar and pour on crust (above). Bake for 40-45 min

  4. Beat to stiff peaks - spread on baked rhubarb, return to oven for 10 min, or until peaks brown slightly.
