Recipe Ingredients for Katherine's Herb Quiche

1 onion, diced
4 cloves garlic, minced
1 tbs olive oil
28 oz tofu
4 large eggs
1 tsp salt
2 tsp basil
1 cup grated yellow squash
1 tsp sesame oil

Recipe Directions for Katherine's Herb Quiche

  1. Pre-heat oven to 400 degrees.

  2. Sautee the onion and garlic in the olive oil.

  3. Blend the tofu, sesame oil, salt, pepper and basil until smooth. Add the onion and garlic to the tofu mix and stir to combine. Pour the mix into muffin tins and bake for 60 minutes or until firm.
