A warm and soothing comfort food for a cold winter day. Light and filling.

Recipe Ingredients for Kate's Chicken Soup

1 lb skinless boneless chicken
5 small potatoes
1 cup celery
1 onion
2 T olive oil
1 cup chard
1 large carrot
8 cups water
1/3 cup rice

Recipe Directions for Kate's Chicken Soup

  1. Saute onions and garlic in olive oil

  2. Add celery, carrots, potatoes, carrots and saute for 10 minutes

  3. Add 8 quarts water and rice and simmer until potatoes are cooked. Add herbs (sage and thyme)

  4. Cut chicken into chunks, about 1 cubic inch

  5. Add to soup and cook for 10 minutes or until done

  6. Add chard and cook for a few minutes
