Recipe Ingredients for Kashmiri Rogan Josh

300 g lamb
2 tbsp oil
1 cube chicken stock
100 ml fat free yogurt
50 g ground almonds
300 g butternut squash
4 tomatoes
1 onion

Recipe Directions for Kashmiri Rogan Josh

  1. marinate diced lamb the night before in yogurt, grated ginger, half tsp turmeric and dried chilli flakes, 4 cardamon pods, 3 bay leaves

  2. heat oil and mustard seeds until they pop, add onion and fry for a few minutes

  3. add lamb with marinade and cook for 10 mins before adding ground almonds

  4. add stock to cover meat and simmer with lid for 1.5 hrs

  5. add diced butternut squash and green pepper and cook lid off for 20-30 mins more, adding more liquid if required

  6. add tomatoes and peas and turn off heat, add lid and leave for 10 mins

  7. season, add coriander, yogurt and serve with rice
