Kashk-o-baademjan or Persian eggplant dip (Baba Ganoush)

Recipe Ingredients for Kashk-o-baademjan

10 cup (1" cubes) Eggplant
10 clove Garlic
1 large Onions
3 serving kashk (Sadaf)
2 tbsp ICBINB! Light (Soft)
1 oz Mint

Recipe Directions for Kashk-o-baademjan

peel the egglants, cut them up and place in a pot with a little water and steam cook them till very tender and easily mashable. mash the egg plants to a dip consistency. in a seperate pan, fry the onions with butter and at the end add the garlic to quickly sear; be careful not to sear too long since garlic burns very easily! add the garlic and onions to the eggplant, then add the kashk and mix well, garnish with fresh mint and more kashk. i also fry a little bit of dried mint in hot oil and place on top for garnish.
