Recipe Ingredients for Kashi Dust Muffins

1 cup Go Lean Cereal 'dust'
1 1/2 cups flour
16 g (g g) .5 cup Stevia
2 teaspoons baking powder
1/4 teaspoon salt
4 carrots
1 medium apple
1 cup chopped pecans
1 cup golden raisins
1/4 cup coconut oil
1/2 cup applesauce
1 teaspoon vanilla
3 eggs
1 cup rolled oats

Recipe Directions for Kashi Dust Muffins

  1. Preheat oven to 350 degrees, prepare muffin tins by spraying with baking spray with flour.

  2. Mix cereal crumbs, flour, sugar and baking powder in a bowl. (you may want to process the cereal crumbs if they seem to large)

  3. Add shredded carrots,peeled and shredded apple, chopped nuts and raisins to flour/cereal mixture.

  4. In a separate bowl mix/blend melted coconut oil, applesauce, vanilla and eggs.

  5. Add to flour/cereal mixture and stir until moistened.

  6. Bake until toothpick comes out clean about 20 minutes.
