If you're not vegetarian, you can substitute chicken or beef stock for the water for a slightly different flavor. This recipe serves 6 as a hearty breakfast item. Can also play around with the seasonings as well as adding salt and pepper if desired. Unprocessed groats are bitter, and should be toasted in a bit of oil for a few minutes before cooking. Kasha is buckwheat groats that already have been crushed into smaller pieces and toasted to bring out the nutty flavor. Consider this when at the store. Buckwheat is a fruit seed related to rhubarb and sorrel. This is high protein and fiber.

Recipe Ingredients for KASHA VARNISHKES (buckwheat with noodles)

1 lb whole wheat pasta
2 large onions
2 tbsp olive oil
1 cup buckwheat groats
4 eggs
2 cups water

Recipe Directions for KASHA VARNISHKES (buckwheat with noodles)

  1. In a small frying pan, sauté the onion in 1T oil until the onion is quite soft and brown. Scramble 3 of the eggs and add to the onions to cook till lightly done. Smash it up into little chunks. Set aside.

  2. In a bowl, mix the kasha (buckwheat groats) and 1 beaten egg with a fork until all of the kernels are coated with the egg.

  3. In a small pot or in the microwave, bring the water, 1T oil and any salt and pepper or other seasonings you want to taste to a boil. Set aside.

  4. In another small pot over medium heat, cook the kasha (do not add oil or butter), stirring constantly with a fork to heat and separate all the kernels, for 1-2 minutes until all the kernels separate (the cooked egg on the outside of the kernels helps keep them apart). Remove from heat. Pour the liquid and onion & mixture into the Kasha. Stir, then cover immediately and cook over lowest heat for 10 minutes, or until all liquid is absorbed. Transfer to a large bowl and mix with the noodles. Serve hot.
