Recipe Ingredients for Kari's Mega Chili

1 1/2 lbs stew beef
1 1/2 lbs ground turkey
1/2 lb italian sausage
1 cups pumpkin puree
2 bell peppers, rough chop
2 onions, sliced
1 carrot, diced
3 stalks celery, diced
3 jalapeno peppers, diced
2 habanero peppers, minced
2 cups diced tomatoes, no salt added
1 cup chicken stock
1 1/2 cups pinto beans
1 1/2 cups black beans
1 1/2 cups kidney beans
2 tbsp ground cumin
1 tbsp cayenne pepper
1 tbsp oregano
1 tsp ground cinnamon

Recipe Directions for Kari's Mega Chili

  1. Brown sausage, turkey, and then stew beef in the same large pot or dutch oven, saving fat.

  2. Remove meats and set aside.

  3. Add onions, carrots, and celery. Cook over medium heat for several minutes or until onions are translucent.

  4. Add bell peppers and hot peppers.

  5. Cook 2-3 minutes--avoid putting face directly over pot as habanero fumes are volatile!

  6. Add spices and stir well to coat. Cook 1-2 minutes or until spices are toasted and fragrant.

  7. Add meats and mix well.

  8. Add tomatoes and beans. Combine chicken stock with pumpkin puree and add to pot.

  9. Mix carefully to combine everything well.

  10. Slowly bring to a boil before lowering heat to a low, slow simmer. Allow to simmer uncovered for at least 2 hours.
