Yumm! I used egg beaters to reduce the amount of cholesterol, but you could just as easily use 2 eggs plus 2 egg whites. If you don't like sour dough, shame on you. Kidding...just sub in your favorite bread instead. You can let this chill 1-24 hours in the fridge before baking.

Recipe Ingredients for Kari's Chicken Strata

1 lb chicken breast , cooked and chopped
1 large onion, vertically sliced
2 garlic cloves, minced
4 oz spinach, torn
8 oz French bread sourdough, sliced
4 oz 2% sharp cheddar, shredded
2 medium tomatoes, each seeded and cut into 1/2-inch-thick slices
1 1/2 cups fat-free milk
1/4 cup thinly sliced fresh basil
2 tbsp fresh thyme
1/4 teaspoon black pepper
1/2 cup egg beaters or 2 eggs
4 tbsp egg beaters or 2 egg whites

Recipe Directions for Kari's Chicken Strata

  1. If bread is fresh, slice and toast at 350 degrees for 10-20 minutes. If bread is a day or two old, slice and toast for 5-10 minutes.

  2. Reduce oven temperature to 325.

  3. Arrange bread slices in the bottom of a 7x11" casserole that has been lightly sprayed with no-stick spray, overlapping if necessary.

  4. In a heavy skillet over medium-high heat, cook onions 4-5 minutes or until translucent. Add garlic and cook additional 1-2 minutes. Remove to a bowl, combine with cubed chicken, and set aside.

  5. Add torn spinach to skillet with a 2-3 tablespoons of water. Saute spinach until wilted and most of water has cooked out.

  6. Sprinkle 1/2 cup of cheddar over bread layer. Top with an even layer of cooked spinach, followed by an even layer of onion and chicken mixture. Finish layers with tomato slices, overlapping if necessary.

  7. Whisk together milk, egg beaters, basil, thyme, and pepper. Slowly and evenly pour mixture over strata. Place casserole on a baking sheet and bake, uncovered, 35-40 minutes. To check for doneness, insert a knife into the center and see if it comes out clean. If strata isn't done, continue checking at 10 minute intervals.

  8. When knife returns clean, top with remaining 1/2 cup cheddar and bake for an additional 5 minutes, or until cheese is melted.

  9. Allow to cool 5-10 minutes before serving.
