This is a Tex-Mex inspired omelet of my own creation that is both nutritious and filling with lots of fiber and protein. Serve this with a cup of fresh seasonal fruit on the side and you have the energy boost you need to start your day on the right path!

Recipe Ingredients for Karen's Mexas Breakfast

1/2 cup tomato, diced, divided
1/2 cup onion, diced, divided
1 jalapeno pepper, small, diced
1/2 tablespoon garlic, minced
1 tablespoon cilantro, minced
1/4 teaspoon lime juice
1/8 teaspoon salt, divided
1/4 teaspoon black pepper, divided
1/8 teaspoon oregano
1 oz turkey, ground
1/4 cup bell pepper, any variety
1/4 cup mushrooms, any variety
1/8 cup carrots, diced
1 cup raw spinach, sliced thinly
1/2 cups egg beaters
1 tablespoon refried beans, any variety
1 wedge Laughing Cow cheese, French Onion

Recipe Directions for Karen's Mexas Breakfast

  1. In a small bowl mix together half the diced tomatoes, half the diced onions, jalapeno pepper, garlic, cilantro, lime juice, half the salt, half the black pepper and oregano. Place in freezer to chill while preparing your omelet.

  2. In a small non-stick fry pan coated lightly with a non-stick spray and heated over medium high heat, crumble ground turkey (or ground chicken breast) into fry pan. Immediately add remaining onion, bell pepper, mushrooms and carrot. Cook until onions are almost translucent. Add remaining tomatoes and half the remaining salt and pepper. Cook for one to two more minutes set aside.

  3. Pour Egg Beaters into a small bowl and gently whip to wake up adding the remaining salt and pepper. Place pan with vegetable ? turkey mixture back on flame and heat through. Pour egg mixture over vegetable ? turkey mixture and cover. Cook for two minutes.

  4. Crumple or spread Laughing Cow cheese and refried beans over surface of omelet. Fold in half and cook another two minutes.

  5. Place on dish and smother with chilled salsa topping.
