Beans, vegetables and pasta with lean turkey in a tomato-based broth.

Recipe Ingredients for Karen's Italian Chili

28 oz light kidney beans
28 oz dark red kidney beans
28 oz great northern beans
56 oz petite diced tomatoes
2 cups vegetable broth
4 cups V-8 juice
2 cups water
1 cup chopped celery
1 cup chopped onion
1 tablespoon minced garlic
1 cup chopped carrots
1 lb lean ground turkey
1 lb turkey sausage
1 cup macaroni

Recipe Directions for Karen's Italian Chili

  1. Cook macaroni as directed by box, until barely done; set aside.

  2. In stock pot, put beans, tomatoes, broth, V-8 juice and water. Cook on med-low.

  3. Cook the turkey and turkey sausage together in a skillet; Add Italian spices as desired. Add celery, onions and carrots and cook until veggies are tender.

  4. Add the meat-veggies mixture to the stock pot. Turn to high until boiling, then reduce heat to med-low again. Add the macaroni. Simmer for 1-2 hours before serving.
