Slightly bitter vegetarian dish but extremely good nutritional value. If eaten moderately once everyday, it is considered to control diabetes and most can do without medications.

Recipe Ingredients for Karela Masala

500 grams karela
3 onions
3 tomatoes
2 tbsp tomato paste
1 tsp salt
1 tsp red chili powder
1 tbsp ginger
1 tbsp olive oil
2 tbsp cilantro

Recipe Directions for Karela Masala

  1. cut karela into 1/4 inch thick slices. slice onions into thin slices and chop tomatoes and ground the ginger.

  2. In a non stick pan , heat oil and cook the onions till transparent. then add salt, chilli powder and fry for a minute. Now add tomatoes , tomato paste and ground ginger and cook for at least three minute, stirring. now add the karela, cook on high for a minute, tern down the heat to a slow simmer and put freshly chopper cilantro and let cook on very slow simmer for about 20 minutes.
