Makes 4 servings



Japanese Fried Chicken. May use dry sherry, mirin, shaotsing wine, or sugar as sake substitute. May use corn starch as potato starch substitute. Nutrition from oil may vary, oil calories taken by chicken was "eyeballed" and may be more or less than actual value.

Recipe Ingredients for Kara Age - Tang Chicken - Fried Chicken

112 deboned chicken thigh
1 g grated ginger
1/2 optional garlic
1 1/2 g soy sauce
1/2 g sake
4 oz potato starch
6 tbsp vegetable oil

Recipe Directions for Kara Age - Tang Chicken - Fried Chicken

  1. De-bone and cut chicken thighs into 'bite size' (~2 inch) pieces.

  2. Grate 2 tbsp ginger.

  3. Mince 1 tbsp garlic. (optional)

  4. Marinate chicken 10 - 30 minutes with 1 tbsp sake, 3 tbsp soy sauce, garlic, and ginger.

  5. If marinating chicken overnight, marinate with 1 tbsp sake, 1 tbsp soy sauce, garlic, and ginger. Then add 2 tbsp soy sauce before cooking.

  6. Coat chicken with 0.5 cup potato starch.

  7. Prepare oil for frying about 180C/355F.

  8. Fry a few pieces at a time until golden brown then drain well and enjoy.
