Hearty stew with great flavor. Can substitute V8 for tomato paste; just reduce water to 3/4 c. We enjoy it served over cheesy (cheddar) noodles (farfalle or rotini).

Recipe Ingredients for Kapama/Beef Stew

1 1/2 pounds beef stew meat
3 tbsp vegetable oil
1 clove garlic
1/2 onion, diced
6 ounce tomato paste
1 1/2 cups water
3 tbsp parsley
1/2 tsp salt
1/4 tsp pepper
3/4 pound potatoes
1/2 pound baby carrots

Recipe Directions for Kapama/Beef Stew

  1. Saute onion and garlic in oil. Add meat and brown.

  2. Cut up potatoes.

  3. Once meat is brown, add tomato paste through baby carrots.

  4. Reduce heat, cover and simmer for 45-60 minutes (until potatoes are done).
