Kale, orange bell pepper and parsley all have good amounts of Lutein+Zeaxanthin. Pumpkin seeds have zinc. Carrots provide the beta carotene.

Recipe Ingredients for Kale Vision Salad

3 cup kale, chopped
1 cup red cabbage, chopped
1/4 cup orange bell pepper
1 medium carrot, grated
1 cup parsley, chopped
1 tbsp pumpkin seed

Recipe Directions for Kale Vision Salad

  1. Hand Shred kale except for spine. I use both curly and flat for more texture and color.

  2. Sliver red cabbage

  3. Sliver orange bell pepper

  4. Grate 1/2 carrot

  5. Use Parsley leafs only

  6. Add pumpkin seeds

  7. toss
