Recipe Ingredients for Kale Veggie Casserole

2 medium onions, diced
1/2 head cabbage, chopped
1 pound kale, tough stems and center ribs removed and leaves chopped
6 carrots, diced
1 cup celery, chopped
2 cups broccoli, diced small
2 T low sodium soy sauce
4 cups cooked cannelini beans
1/2 cup nutritional yeast
2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon paprika
3 cloves garlic
1/2 cup raw almonds
3 T sesame seeds

Recipe Directions for Kale Veggie Casserole

  1. In a large pan, cook first 7 ingredients in enough water to cover until veggies are tender.

  2. In a food processor, blend remaining ingredients, except sesame seeds.

  3. Put veggies in a large baking dish. Pour blended ingredients over veggies. Sprinkle with sesame seeds.

  4. Bake at 350F for about 20 minutes, until top is slightly browned and crispy.
