An easy to make and almost shockingly healthy soup as written or substitute ham for turkey for a more savoury alternative.

Recipe Ingredients for Kale soup with turkey and vegetables

3 cups chicken stock (or turkey)
5 cups water
260 g turkey, cooked, meat only (yield from 3 wing pieces)
340 g raw potato, diced (2 medium)
212 g raw cauliflower, diced (3 cups)
30 g raw broccoli, diced (1/2 cup)
120 g raw onion, chopped (1 small)
250 g raw kale, shredded (1 bunch)
1 black pepper

Recipe Directions for Kale soup with turkey and vegetables

  1. Boil turkey wing pieces in water 1 hour to make stock (canned or frozen stock can be substituted, note it will contain more sodium)

  2. Remove meat from wings and set aside.

  3. Add water to stock make up about 8 cups. return to boil.

  4. Chop cauliflower, broccoli, onion and potatoes, add to stock and simmer covered for about a half hour, until potatoes fully cooked.

  5. Add turkey (fresh wing meat, leftover turkey, or ham) and shredded kale. Cook covered about fifteen minutes.

  6. Season with black pepper and salt to taste, serve hot.
