Recipe Ingredients for Kale Soup With Chicken and Rice

20 ounces of kale
2 cups of chopped onion
2 tablespoons of olive oil
16 ounces of mushrooms
4 cups of rice
1 cup of red peppers
2 tablespoons of garlic
1 lb of skinless chicken breast
8 cups of chicken stock
1 tablespoon of crushed red pepper

Recipe Directions for Kale Soup With Chicken and Rice

  1. Thaw our kale if using frozen version.

  2. Heat a stock pot or sturdy pan with olive oil using medium heat. Add chopped onion and garlic and sweat out for 5 to 7 minutes.

  3. Chop chicken into 1 inch cubes, then add onion and garlic mixture. Salt and pepper lightly.

  4. Add red bell pepper and cook another 5 minutes.

  5. Add thawed kale to mixture and then add crushed red pepper and cook until everything seems mixed. About 10 minutes in medium heat.

  6. Add cooked rice to pot then mix with all vegetables and chicken until well mixed.

  7. Add all of the chicken stock and let heat through for about 5 to 7 minutes. Salt and pepper to taste -- lightly.

  8. Take hand blender and puree the contents of pot until a smooth consistency is seen.

  9. Enjoy!
