Recipe Ingredients for Kale, with Sautéed Apples and Cranberry Vinaigrette

1 onions
3 bunches of spinach
1 1/2 t salt
1 1/2 t pepper
1 c vegetable broth
3 apples
1 1/2 c dried cranberries
1 c apple cider
1/3 c maple syrup
1/3 c olive oil
1 T Dijon mustard
1 1/2 t cider vinegar
1 t salt
1/2 t pepper

Recipe Directions for Kale, with Sautéed Apples and Cranberry Vinaigrette

Sauté apples and shallots in olive oil until soft and slightly browned, about 5 minutes. Stir in kale, salt and pepper, and broth. Cook 3-4 minutes until kale is tender. If using dried cranberries in vinaigrette, reconstitute in boiling water. To make vinaigrette, blend ingredients until smooth in a food processor. Add vinaigrette ti spinach and toss. Serve hot.
