A spicy, flavorful soup with italian sausage, kale and potatoes in a light chicken broth/cream base.

Recipe Ingredients for Kale and Sausage Soup

98 oz. chicken broth
1 cup half-and-half
3 lbs. ground turkey (spicy italian links)
4 med. potatoes, sliced
1 lb. kale, finely chopped
1 med. onion, chopped
2 tsp. salt
1 tsp. crushed red pepper

Recipe Directions for Kale and Sausage Soup

  1. Slice turkey sausage links in half, lengthwise. Cook under broiler until done, turning halfway (about 8 minutes).

  2. Add all other ingredients to a large stock pot. Bring to a slow boil and reduce heat to med. low.

  3. Cut sausage into small slices and add to pot.

  4. Cook until potatoes are tender and all flavors have blended, about 1 hour.
