Can be eaten as an "all chunk" soup -- or puree cooked potatoes and onions in beef broth with seasonings before adding the rest of the veggies for a "creamier" and heartier soup base.

Recipe Ingredients for Kale and Potato Soup

16 ounces cherry tomatoes
10 ounces kale
12 ounces potato
10 ounces pinto beans
48 ounces beef broth
3 T olive oil
4 ounces onion
1 t salt
1/2 t pepper
14 grams fresh basil
1/4 c shitake mushroom
10 ounces rotel tomatoes
8 ounces whole kernel corn

Recipe Directions for Kale and Potato Soup

  1. Soak pinto beans overnight, bring to a boil in fresh water and cook for 2 hours until tender. Prepare remaining ingredients and make the stock while the beans cook.

  2. Halve tomatoes, chop kale, cube potatoes, mince onion, mince basil, chop mushrooms.

  3. Boil potatoes, onions, and fresh tomatoes in beef broth with seasonings. Add remaining ingredients and simmer for 1 - 1 1/2 hours.

  4. Serve with crisp toasts or breadsticks.
