Flavorful and healthy pesto made primarily from Kale, mingled with creamy roasted garlic, olive oil and peanuts, and other spices

Recipe Ingredients for Kale Pesto

2 cup, chopped Kale
0.25 cup Roasted Garlic
3 clove Garlic
4 oz Peanuts, All Types, Dry-roasted
8 tbsp Olive Oil, Extra Virgin

Recipe Directions for Kale Pesto

  1. (for home-roasted garlic)

  2. Preheat oven to 400 degrees, take entire garlic bulb, de-paper but leave attached to base - put in foil, drizzle 1 tsp olive oil, fold over foil. Roast for a little over 30 min.

  3. Shred 1 lb of fresh, de-stemmed Kale in food processor, with roasted garlic, garlic, olive oil, peanuts, and spices of choice (such as basil, parsley and pepper) Process until smooth.

  4. Makes about 2 cups.
