Servings are big, approx. 2 cups each.

Recipe Ingredients for Kale Peanut Slaw

8 cups kale, chopped finely with ribs removed
1 carrot, peeled and sliced into coins
1 yellow pepper, sliced into 2-3" strips
1/3 cup olive oil
2 tablespoons sesame oil
1/3 cup apple cider vinegar
1/2 teaspoon salt
2 tablespoons brown sugar, packed
1 cup peanuts, oil-roasted

Recipe Directions for Kale Peanut Slaw

  1. In large salad bowl combine kale, carrot and pepper.

  2. In blender, combine 1/2 cup peanuts, oils, vinegar, salt and sugar. Puree into dressing-like consistency.

  3. Chop remaining 1/2 cup of peanuts.

  4. Toss vegetable mixture with chopped peanuts and dressing.
