1 T olive oil 1 C onions ! C Carrots 2 gloves garlic 6 C broth reduced sodium chicken 1 t basil 4 cups Kale 1 C Celery 1/2 Red pepper 1/2 c mushrooms 1/2 c lentils 2 cans tomatoes 1/2 tsp salt 1/8 tsp pepper 1 1/2 Cup Chicken breast cooked

Recipe Ingredients for Kale, Lentil, and Chicken Soup

1 tbsp Olive Oil, Extra Virgin
4 cup, chopped(67 g) Kale
1 cup, chopped Onions
1 cup, chopped Carrots
1 cup, diced Celery
0.5 cup, chopped Peppers, Sweet, Red
2 clove Garlic
0.5 cup, pieces or slices Mushrooms
1 serving Tomatoes, Crushed, Canned
1/2 cup Petite Cut Diced Tomatoes
0.5 cup Red Lentils
1.5 cup, chopped or diced Chicken, Breast, Meat Only
1 dash Pepper, Black
1 dash Salt, Table

Recipe Directions for Kale, Lentil, and Chicken Soup

  1. in a large saucepan heat oil over medium low heat. Add onions, carrots, celery, garlic, red pepper, and mushrooms. Cover and cook for 5-7 minutes.

  2. Add broth and dried basil to vegetables. Bring to boil. Reduce heat. Cover and simmer for 10 minutes. Stir in Kale, salt and pepper. REturn to boiling reduce heat. Cover and simmer for 10 minutes.

  3. Stir in cooked chicken, tomato, red lentils. Cover and simmer for 5-10 minutes more until Kale and lentils are tender.
