Recipe Ingredients for kale and kidney bean tacos

1 medium (2-1/2" dia) Onions
3 clove Garlic
0.5 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
0.5 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
3 cup, chopped Kale
1 oz (60 raisins) Raisins, Seedless
13 oz Beans, Kidney, Red, Mature Seeds, Canned
1 oz Dried Extra Fancy Porcini Mushrooms
0.75 cup Quinoa

Recipe Directions for kale and kidney bean tacos

soften onions, garlic, and peppers in a large, deep skillet. add kale and cover - wait until kale is soft and add mushrooms, raisins, and kidney beans. add a small amount of vegetable broth if your raisins are dry. while this is sauteing, cook the quinoa according to instructions on package. serve with warm corn tortilas (i like to put mine on the open gas burner to make them warm and crisp).
