A low carb and high fiber hash dish. I substituted cauliflower for 1 lb. patatoes and eliminated 2 Tablespoons of butter.

Recipe Ingredients for Kale and cualiflower salad

3 tablespoons olive oil
3 1/2 cups cauliflower, par boil (stil crunchy)
1/2 pound mushrooms, diced
1 red bell pepper, diced
1 cup,+cubes acorn squash
1 tablespoon shallot, finely chopped (tbsp+chopped)
2 teaspoons garlic powder
1 pinch salt
1 pinch ground black pepper
1 cup chopped kale
4 tbsp sage

Recipe Directions for Kale and cualiflower salad

  1. Place oil in a large skillet over medium heat. Melt butter and mix mushrooms, pepper, squash, and shallot. Season with garlic powder, salt, and pepper. Cook 25 minutes, stirring occasionally, until squash are tender.

  2. Mix kale, cauliflower, and sage into skillet. Continue cooking 5 minutes, until kale is wilted. Serve and enjoy!
