Makes 2 servings

Toasted kale chips with olive oil and spice. A healthy version of potato chips.

Recipe Ingredients for Kale Chips

2 cups kale
2 tbsp olive oil
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp garlic powder
1/8 tsp seasoning salt

Recipe Directions for Kale Chips

  1. Remove ribbing from kale and rip into large bite-sized pieces. Wash in a salad spinner. Preheat oven to 350F.

  2. Mix olive oil with spices which can be changed due to preference. I enjoy spicy (not hot) chips with low salt.

  3. Drizzle olive oil mixture over kale chips. Toss to coat. Place kale on a baking sheet covered with parchment paper.

  4. Bake for 10-15 minutes. Watch carefully, even a slight amount of burning can result in burnt tasting chips. They can burn rather quickly.

  5. Drain on paper towel before serving. They are delicious as a potato chip substitute. Eaten warm or cold.
