A light and vegetable-packed soup

Recipe Ingredients for Kale & Cannellini Vegetable Soup

1 tablespoon extra-virgin olive oil
1/2 teaspoon crushed red pepper flakes
6 cups kale
12 oz white beans
4 celery stalks, chopped
6 garlic cloves
3 medium carrots or equiv. winter squash, chopped
1 medium red onion, chopped
39 grams (3 cubes making 6 cups) vegetable broth
2 cups water

Recipe Directions for Kale & Cannellini Vegetable Soup

  1. Heat olive oil.

  2. Cook celery, carrot and onion in the olive oil for a few minutes to bring out the flavor and to cook through.

  3. Add the red pepper flakes, garlic kale and simmer for another 5 minutes.

  4. Add the beans, vegetable stock and water and bring to a boil.

  5. Garnish with sliced olives (optional).
