Recipe Ingredients for Kale-asparagus-squash tartine

2 tbsp olive oil
1 onion, fine-medium dice
2 cloves garlic, minced
1 pound kale, frozen
1 1/2 cups asparagus, chopped
1 lb butternut squash
1/4 tsp sea salt
1 tsp soy sauce
1/2 tsp ginger powder

Recipe Directions for Kale-asparagus-squash tartine

  1. Slice the bulb end of the squash vertically, scoop out the insides, and roast, cut sides up, in about an inch of water, at 400 for 30-35 minutes - until pretty mushy.

  2. Saute the onion and garlic in olive oil (1-2 tbsp) over medium-high heat until the onions are translucent - 5-7 minutes-ish

  3. Add the asparagus, but not the tips, saute another 2 or 3 minutes.

  4. Add the frozen kale and asparagus tips. Every minute or two, break it up with the spatula. When it's mostly thawed, cover the pot and leave for 3-5 minutes or so. If you're using fresh kale, skip this part and just saute until the kale is as done as you want it.

  5. Add sea salt to taste, and a few dashes of ginger - maybe 1/4-1/2 teaspoon, and a splash of soy sauce - not much - a teaspoon max. Stir.

  6. During breaks in that process (while the onions are cooking, after you add the kale and cover the pot), peel and chop the squash. Add a few dashes of sea salt and mash with a fork. If the kale is done before you're done with this, just turn the pot to low to keep it warm.

  7. Put a whole wheat pita in the toaster - just for a minute or two - just long enough for it to be warm but not crunchy.

  8. Slice the pita to open the pocket, spread a generous layer of squash on each half, then spread a layer of the kale and asparagus.
