Recipe Ingredients for Kajikit's Light potato salad

2 large red potatoes
1/2 small onion
1/2 cup reduced-fat sour cream
2 tbs Hellmann's light mayonnaise
2 tbs relish
1/2 cup 2% milk
1 tbs fresh parsley
1 tsp fresh thyme

Recipe Directions for Kajikit's Light potato salad

  1. Chop and boil potatoes until done.

  2. Drain and allow to cool for half an hour.

  3. Finely chop onion and parsley.

  4. Mix all other ingredients in a jug and add salt and freshly-ground pepper to taste.

  5. Combine with potatoes and serve.

  6. Makes four generous servings.
