Kaese Spaetzle Recipe

I had to use egg noodles in the recipe since Spaetzle didn't show up. I also did the calorie analysis with swiss cheese. I use emmentaler. This is a somewhat classic German recipe that I have modified. I added mushrooms for one and the parmesan (or pecorino romano) for another. I don't know the exact amounts since I rarely measure anything.

Recipe Ingredients for Kaese Spaetzle

8 oz. egg noodles
1 tbsp sea salt
2 c. swiss cheese
1 large onion
2 tbsp olive oil
8 oz. mushrooms
1/4 c. milk
1/2 c. bread crumbs
1/4 c. parmesan cheese (or pecorino romano), grated

Recipe Directions for Kaese Spaetzle

  1. Heat oven to 350 degrees.

  2. Cook the noodles to package directions.

  3. Grate cheese.

  4. Chop onions into small pieces.

  5. Add olive oil to skillet and cook onions until a little browned.

  6. Combine the noodles, onion, mushrooms, and cheese and put into an 9 x 13 casserole.

  7. Pour milk (or cream if you prefer) over mixture and top with bread crumbs and parmesan cheese.

  8. Bake until warm through and cheese is melted and bread crumbs are browned, about 30 mins.
