Squash soup with garlic and ginger. Tastes very sweet.

Recipe Ingredients for Kabocha Squash Soup

4 cup Kabocha Squash
3 cloves Garlic
2 tbsp Heavy Cream
1 tsp Ginger Root
0.5 tsp Nutmeg
300 grams Marrow
1 dash Salt

Recipe Directions for Kabocha Squash Soup

  1. Purée the squash (including the skin) in a food processor.

  2. Add the marrow (which you make by rendering turkey bones) by tablespoons to make it purée faster.

  3. In a saucepan, use some marrow to sauté the garlic and whisk in the spices

  4. Add the puréed squash to the saucepan.

  5. Add the Heavy Cream to taste.

  6. Add salt & pepper to taste.
