A sort of shrimp stew to be served over fluffy white rice (Jasmine works well) or possibly rice noodles.

Recipe Ingredients for Jumbo Shrimp with Tomatoes and Feta

2 tbsp. extra-virgin olive oil
4 garlic cloves, minced
1/3 cup fresh parsley, chopped
4 tsp. fresh oregano, chopped
1/2 tsp. crushed red pepper flakes
4 tbsp. tomato paste
14 1/2 oz diced tomatoes (Italian-style), drained
2 1/2 cups low-sodium chicken broth
28 large (jumbo) shrimp, peeled and deveined
1 cup grape tomatoes, halved
6 oz feta cheese, cubed
1 cup Jasmine rice, cooked
1 dash of salt (to taste)
1 dash of pepper (to taste)

Recipe Directions for Jumbo Shrimp with Tomatoes and Feta

  1. Preheat oven to 450 degrees.

  2. In a large skillet over medium heat, add oil. Add garlic, parsley, oregano, and red pepper flakes and sauté until garlic is soft, about 3 minutes.

  3. In a 1.5 quart baking dish, combine garlic mixture, tomato paste, diced tomatoes, chicken broth, salt and pepper and mix well. Spoon shrimp, grape tomatoes, and feta cheese over top and mix lightly to "wet" these three items.

  4. Bake for 15-20 minutes or until shrimp are fully cooked. Sprinkle with salt and pepper to taste and serve over rice or rice noodles.
