Jumbalaya Recipe

A delicious and healthy jumbalaya without meat.

Recipe Ingredients for Jumbalaya

2 cup whole grain rice
2 cup red pepper
2 cup green pepper
3 cups diced tomatoes
1 tablespoons olive oil
2 tablespoons chicken bouillon
3 cups water
1/4 cup onion

Recipe Directions for Jumbalaya

  1. Boil three cups of water and two tablespoons of chicken bouillon.

  2. Dice 1 green pepper and 1 red pepper.

  3. With a light coating of olive oil, stir fry peppers with about 1/4 cup of onions. (I added a little kielbasa for my husband, but didn't to mine. You could always try adding ground turkey.)

  4. Add tomatoes, pepper stir fry, rice to boullion mixture.

  5. Let cook until rice is tender and liquid has been absorbed. Add a touch of cayenne pepper for a little kick.
