11 tbsp parmesan cheese
4 carrots
8 cups vegetable broth
2 cups broccoli
1 tbsp parsley
1 dash salt
1 dash pepper
2 tbsp olive oil
1 small onion

Recipe Directions for July's Broccoli carrot soup

  1. heat coarsely chopped vegetables in vegetable broth with olive oil and parsley.

  2. once tender blend in blender

  3. add tablespoon of grated parmesan cheese

  4. salt and pepper to taste
