Boca burger "meat" spaghetti sauce with thin whole wheat noodles

Recipe Ingredients for Julie's Vegetarian "Meat" Spaghetti

16 oz dry Whole Wheat Thin Spaghetti
4 serving Original Burgers
24 oz Prego Italian Sauce Tomato Basil Garlic
1 cup Mushrooms
1 medium Green Bell Pepper
0.25 cup Olive Oil
2 tbsp Parmesan, Grated Cheese

Recipe Directions for Julie's Vegetarian "Meat" Spaghetti

  1. Start with a large skillet on Medium heat. Put frozen boca burgers and teaspoon of oregano in the skillet with a little olive oil (enough to coat the skillet). Fry up and break apart into what looks like ground beef. Lower heat to Med low. Add fresh mushrooms and cut up green bell pepper. Add 3 shot glasses of water, stir up and cover (this will steam the mushrooms and peppers without burning your boca burger "meat" - alternately, start with the mushrooms/peppers before the boca burgers). Once mushrooms and peppers are cooked take off lid and let remaining water evaporate. Then pour in the entire jar of Spaghetti sauce. Add another teaspoon of Oregano, a pinch or two of salt and garlic powder to taste. Stir all ingredients until well mixed. Leave on very Low heat - stirring occassionally when it bubbles. Keep warm in this way until ready to serve.

  2. For noodles, get a big pot, fill 1/2 to 3/4 full of water, 2 pinches of salt and 2 tablespoons of olive oil. Bring water to boil. Break noodles into 3rds and place in boiling water without a lid around the same time that you take the lid off of the sauce to allow the remaining water to evaporate. Make sure pot doesn't boil over - lower heat if needed, but keep it boiling. Leave on for around 5 min - turn off heat and allow the water to still. Carefully use a fork to lift out a few noodles - taking care not to touch the hot water. Allow noodes to cool by blowing on them. Taste and see if they are cooked enough for you. If not, bring pot back to a boil for 1 -2 minutes more. Repeat testing process.

  3. Drain noodles. Serve noodles on a plate, cover with warm spaghetti sauce, and sprinkle with parmesan grated cheese. Voila! Enjoy! :)
