Low Fat & Low Calorie Shepherd's Pie

Recipe Ingredients for Julie's Turkey Shepherd's Pie

4 medium sweet potatoes
20 oz ground turkey
4 cups corn, frozen
1 tbsp worcestershire sauce
2 tbsp garlic, minced
1 small onion, diced
1/2 small green pepper, diced
1/2 cup milk, 1%
3 tbsp smart balance light
4 tbsp parmesan cheese, shredded
3 servings bouillon
1 tsp black pepper

Recipe Directions for Julie's Turkey Shepherd's Pie

  1. Boil sweet potatoes in a pot of boiling water seasoned with bouillon.

  2. Saute garlic, onion, pepper in a pan coated with Pam Olive Oil spray.

  3. Add in ground turkey and brown.

  4. While turkey is browning, drain potatoes and mash with milk and smart balance light.

  5. Once browned, season with worcestershire sauce and pepper.

  6. Pour turkey into the bottom of a glass 9 x 13 pan.

  7. Layer corn next.

  8. Add mashed sweet potatoes on top.

  9. Finish with parmesan cheese.

  10. Bake for 45 minutes at 350 degrees.
