Recipe Ingredients for Julie's Summer Squash Casserole

16 oz Squash, Summer, Crookneck And Straightneck
0.5 cup, sliced Onions
0.5 cup, chopped Peppers, Sweet, Green
1 large Egg, Whole
2 pat (1" sq, 1/3" high) Butter
8 serving Light Dressing
0.5 cup, chopped Pecans
1 serving VIGO ITALIAN BREAD CRUMB
2 oz Fat Free Cheddar

Recipe Directions for Julie's Summer Squash Casserole

  2. 1. Preheat oven to 350 degrees F (175 degrees C).

  3. 2. Bring a large pot of water to boil. Add squash, and cook until tender. Drain well.

  4. 3. Place squash in a large mixing bowl. Add butter to the squash and mash well. Mix celery (if desired), bell pepper, 1 pkt sugar substitute, onion, egg, mayonnaise, salt and pepper, cheese and nuts to the mixture. Transfer the mixture to a 1-quart casserole dish. Top with bread crumbs. Dot with the reserved butter.

  5. 4. Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes.
