super easy super gourmet soup - in place of some of the milk you may substitute broth or fat free half & half- even better & creamier the next day

Recipe Ingredients for Julie's Scallop & Leek Soup

2 leeks
3 cloves garlic
1/2 small onion
4 small red potatoes
58 oz skim milk
1 c whole wheat flour
24 oz scallops
4 tbsp butter
2 tbsp extra virgin olive oil

Recipe Directions for Julie's Scallop & Leek Soup

first boil the potatoes until soft, chop the leeks, onion & garlic, put 1/2 the butter & olive oil in a pan, shake the scallops with the flour, cook the scallops for 3-4 minutes, then add the rest of the butter & olive oil, then add the leeks onion & garlic & cook for 1 minute, add cubed potatoes, add either 50 oz of milk or broth along with bouillon or soup flavoring of your choice (I used sodium free chicken broth granules with skim milk), add spices (I added fresh oregano &thyme) cook for 10 minutes on simmer, then add 1 cup of fat free half & half at the end
