Recipe Ingredients for Julie's Kale speghetti with Chicken

4 cups water
1 lbs kale
3 carrots
6 clove of garlic
1 leek
454 g linguine
4 chicken breast
3 tbs olive oil
1/4 cup parmasan cheese
1/5 tbs salt
1 Pepper to taste
1/2 tbs paprika

Recipe Directions for Julie's Kale speghetti with Chicken

  1. Rinse kale and chop finely or (wait till its cook and use a food processor.)

  2. In a pot add 3 1/2 cups of water, and add kale (about 20 min) until Kale is very tender.

  3. Heat 2 tablespoons olive oil in heavy large pot over medium heat.

  4. Add chopped Leek and cook until soft stirring occasionally, about 6 minutes.

  5. in a food processor add carrots and garlic and chop then add to leek. Stirring occasionally, about 5 minutes.

  6. if you have not chopped your kale finely nows is the time to put in the the food processor (4 Chops) you dont want it to chopped out but small enough.

  7. (reserve the juice)

  8. Add kale and remaining 1 tablespoon olive oil and toss about 5 minutes.

  9. Cover pot and reduce heat to medium-low. stirring occasionally and adding water by teaspoonfuls if dry.

  10. Meanwhile, cook spaghetti in medium pot of boiling water until tender, stirring occasionally. Drain.

  11. Cook chicken breast in 1 tbs of oil, add salt, pepper and paprika (sprinkle) once cook allow to cool for 5 min and cut into strips.

  12. Add cooked spaghetti to kale mixture in pot add parmasan cheese. Add lemon juice and 2 tablespoons (if you want)

  13. reserved cooking liquid; toss to combine, adding more liquid by tablespoonfuls if dry.

  14. Sprinkle spaghetti with grated Parmesan cheese, add /2 a chicken breast strips on the side and serve.
