Recipe Ingredients for Julie's Egg Salad

2 eggs, hard boiled, chopped
44 g sun-dried tomatoes in olive oil, chopped
1 large green onion, about 32 grams, sliced
3 leaves fresh basil, chopped
1/4 tsp kosher salt
1/4 cup yogurt, plain, Greek-style, nonfat
1 tsp. Fresh lemon juice, I don't measure this; just squeeze some into the yogurt

Recipe Directions for Julie's Egg Salad

  1. Combine eggs, tomatoes, green onion and basil leaves in a bowl. Sprinkle with kosher salt.

  2. Mix yogurt and lemon juice in a small bowl with a fork until smooth.

  3. Add yogurt to egg mixture and gently combine.
